Flour 3 cups
Sugar 1 cup
Salt 1/4 tsp
Vanilla 1 tsp
Coconut flakes 1 cup
Butter 3 sticks
Creamed sugar and butter till soft and fluffy then add flour just to mix.
Chill the mix for 30 mins. Make egg wash and dip the cookie into the egg wash then into the coconut. Make a thumbprint in the middle of each cookie. Spoon jam on top of the cookie. ( Here I use my previous homemade grapple jam and marmalade)
Bake at 170 degree C for 20-25 mins.
